Green Coffee Beans Brazil Santos - unroasted 100% Arabica beans from Minas Gerais. You can roast them yourself or use them green.

Brazil Santos is a classic choice for beginners: the beans are forgiving, uniformly sized, and do not require precise temperature control. When properly roasted, they yield nutty, dark chocolate, and caramel flavors with very low acidity.

For Roasting

The simplest way to try is a frying pan: medium heat, stirring constantly, for 10-15 minutes. In the oven, spread the beans in a single layer on a baking sheet, at 220 °C, for 12-18 minutes, shaking every few minutes. For those with a roaster - follow the manufacturer's instructions, until the first or second crack.

The first crack signifies a light roast, the second a dark one. Brazil Santos tastes best in between, at a medium roast. Roasting produces a lot of smoke and chaff, so work in a well-ventilated area or outdoors, and let the roasted beans rest for 12-24 hours before grinding: this allows carbon dioxide to escape and the flavor to balance. It is best to store them in Kraft packaging with a valve.

For Green Use

Roasting is not necessary - green beans can be used to prepare an infusion, the taste of which is much closer to herbal tea than coffee: mild, herbaceous, with a light sweetness and almost no bitterness. There is no coffee aroma in it, as it only develops during roasting.

First, grind the beans - whole, they will barely release any flavor. Pour about 10-15 g of ground beans with 250 ml of boiling water and simmer on low heat for 10-15 minutes, then strain. The infusion will be light yellow or greenish, and the taste can be softened with lemon, honey, or mint. In summer, it is delicious chilled with ice.

How Green Coffee Differs from Roasted

The main difference is chlorogenic acids, the most abundant group of compounds in green beans. During high-temperature roasting, a large part of them decomposes, so significantly more remain in green beans. Caffeine, in contrast, is thermally stable and remains in both, so this is not a decaffeinated product. The coffee aroma, brown color, and characteristic taste only appear during roasting, and green beans have a significantly longer shelf life: they last for several years.
