Demerara is a minimally processed cane sugar from Mauritius. Each crystal is coated with a thin layer of natural molasses, giving the sugar its golden color and a distinct caramel and toffee note.

The crystals are large and hard, dissolving slower than regular sugar. In coffee and tea, it provides a gradual sweetness, while in baked goods, it creates a crisp surface: Demerara is often sprinkled on biscuits, muffins, or cakes before baking.
